I don’t know whether it’s because I’m feeling a little homesick or because I was just craving it, but I made a shepherd’s pie and a pretty damn good one if I do say so myself. Growing up, the only thing my mum could cook (sorry mum) was mince and she cooked them like 8 different ways. We ate a lot of spag bol, chilli, lasagna and shepherd’s pie. Not that I’m complaining in any way, but my sister is definitely still scared. She took over the cooking when she was about 12 or 11 because she was so done with mum’s cooking.
It was vegetarian but still delicious. Lentils were almost impossible to find in the supermarket. Do you ever find yourself walking up and down the aisles for hours on end? I honestly felt like I was losing my mind- how hard is it to find lentils? They weren’t with the pasta or rice, not with the jars and tins and definitely not with the health food. Eventually, I gave up and ordered them online with a food delivery. Does anyone else feel if they’re doing an online food delivery, they have to buy a whole load of random rubbish that you don’t need just to make it socially acceptable?
Anyway, I made this shepherd’s pie by cooking the filling mixture in the slow cooker and using half a bottle of cheap red wine. Everyone knows that once you start cooking with wine, you’re a professional! I then, had a little bit of a failure and asked my friend who was coming for dinner if she had a potato masher- she did not. Turns out I had a masher hidden somewhere, what I didn’t have was a peeler- I clearly don’t eat many potatoes or if I do I leave the skin on.
When it was finished, we had wine and watched Off Campus- clearly the plot of the show was incredible as it was my fourth time in three days. It’s just so fun, quirky and the soundtrack is off the charts. Not that I should admit this, but I had watched it over doing my uni work, which I was two weeks behind on. It’s difficult when the subject matter is dull and doesn’t pique my interest. Like doom scrolling or watching shirtless actors seems so much more appealing.
Then yesterday, I made a pretty good pasta bake, with sausages and vegetables. The best part of both these meals is the leftovers- I have my dinners for a week. Yet despite this, I have ordered a burrito for my dinner tonight. All I have to do is stick the Tupperware in the microwave and bish bash bosh dinner is ready. But nope, I was feeling Mexican, so ordered a burrito. I should probably feel ashamed of myself, but honestly their burritos are incredible.
